Knows correct sharpening techniques for all bladed equipment. Has demonstrated an awareness and implementation of
proper knife skills.
Maintains proper portion control and be able to provide par levels based on census to complete production sheets.
Maintains a clean and sanitary work space, utilizing proper cleaning and sanitation techniques. Is able to identify and clean
equipment safely and accurately.
Must be able to accurately follow production sheets.
Must be able to read and follow recipes.
Knows the proper food holding temperatures & cooking temperatures for TCS food.
Must practice proper food handing techniques to ensure safety of RTE (Ready to Eat) foods.
Must be able to follow batch cooking procedures.
