Manager of Food Service - Convenience

Reports To: Vice President of Operations Travel Plazas

Job Summary:

The Manager of Food Service - Convenience will work closely with the Vice President of Operations to ensure the success of all food service programs that are operating within the Travel Plaza segment. The Manager of Food Service - Convenience will evaluate the performance of all current food service offerings within the C-store space including, but not limited to, hot dogs, coffee, fountain sodas, frozen drinks, baked goods, proprietary food service, and in-store franchise offerings, and execute strategies to optimize performance in these categories. The Manager of Food Service - Convenience will also be tasked with developing the Onvo proprietary food service program. This role will include tasks such working with outside Consultants and Internal Stake Holders in developing the menu, determining the structure of the program, identifying equipment needs, sourcing food suppliers, developing training programs, and hiring the appropriate team members to ensure the program runs successfully.

Essential Functions:

• Analyze sales data from convenience store franchise offerings including and determine profitability and viability of each offering
• Analyze performance of all C-store food offerings including roller grill, baked goods, premade sandwiches, pizza, and salads and determine profitability and viability of each offering
• Present findings from analysis to leadership and propose strategies for moving forward
• Execute solutions to increase sales or identify alternatives to replace existing food service offerings
• Work with outside Consultant and internal Stake Holders to develop proprietary food service program in a timely and cost-effective manner
• Work with outside Consultant and Marketing to develop a menu, pricing, and packaging based on market research
• Define equipment needs and source suppliers for kitchen equipment
• Work with outside Consultant to identify food vendors for C-store food service and negotiate contracts with these vendors to be approved by VPO
• Work with outside Consultant and VPO to determine the viability of Onvo commissary kitchens/bakery and execute if determined to be a viable option
• Write training manuals and oversee training of key employees in relation to food service offerings
• Identify the key performance indicators that will be used to evaluate the performance of food service program and ensure program regularly meets KPIs
• Oversee application process with future franchise partners

Knowledge, Skills, and Abilities:

• Must have a thorough understanding of food service industry
• Must understand key factors that drive the success of any food service operation
• Ability to negotiate to get the best rates on food and equipment
• Ability to keep a project on schedule
• A deep understanding of financial analysis of food service operations
• Ability to ensure projects adhere to a budget
• Ability to train employees and build an execution plan for food service operations
• A thorough knowledge of current trends in the food service industry

Credentials and Experience:

• 
  At least 10 years of experience in food service industry

Physical Requirements:

• 
  This position may require the lifting of boxes that weigh from 10lbs to 20lbs
