We are looking for an ambitious, creative, and skilled Cook to join our existing team and support our kitchen, serving Kilowatt Brewing’s guests in our brewery tasting room and onsite outer space themed speakeasy, The Space Pad. We have a small but growing food menu that consists of Poke and Ceviche items along with our bar menu which includes artisan sausages, hot dogs, and appetizers. The ideal candidate is willing and able to perform all aspects of general kitchen duties including prepping, cooking food, plating orders, and prepping bar service items for our craft cocktail program including juicing and garnish prep.

The Space Pad Concept

The Space Pad exists on the top deck of a tall tower above the surface of the alien planet Rillispore, a technologically advanced 1950’s Atomic Era styled spaceport. The Rillisporians made contact with Earth starting in the late 1940s and 50s in their flying saucers and found a beautiful planet with beautiful people and beautiful architecture. They were so impressed they decided to take the mid-century vibe of the 1950s on Earth back to their planet and incorporated it into their culture and advanced technology. The Space Pad is the Rillisporians favorite cocktail lounge located on their home planet and now decades later they’ve invited us to visit and share with us what they’ve been up to!

When you first walk into the speakeasy through a hidden passageway from Kilowatt, you enter a “space elevator” that beams you up to the planet and top of the tower where you then officially step foot into The Space Pad. As you enter, to your right is a wall made of rock mined from the planet’s surface that contains glowing crystals and fossils. Two large observation windows embedded in the rock are visible where you can peer out over the surrounding spaceport and landscape on the planet. To your left are two plush booths with fireplaces at the tables next to a stacked stone wall backlit with several thousand light bulbs. Dozens of glass portals are embedded in the floor further showcasing the Rillisporian’s technology. Certain food orders from the kitchen for The Space Pad’s guests are sent via a special cable car rocket delivery system that runs across the ceiling. Plants, animals, and works of art from the planet are displayed throughout with another large observation window behind the bar to view the planet.

At The Space Pad expect to find cocktails with flavored smoke bubbles floating on top of your drink, cocktails that look like a lava lamp in your hand, change color as you drink, fruit suspensions, and spherified cocktails that you actually eat rather than drink, similar to giant boba pods each individually filled with cocktail ingredients that bursts with flavor and booze when you bite into it.

Cook / Kitchen Staff Job Description

We’re a small business with an eye toward constantly improving our product which will require you to be adaptable and willing to do a little bit of everything that our kitchen needs to do its best work. You may be asked to do just about any tasks required in the kitchen. The specific tasks that you may perform can change as often as every day based on the shifting needs of the brewery, restaurant and speakeasy. You may spend time preparing ingredients, cooking food, checking in deliveries, cleaning dishware, sanitizing work stations, interacting with customers, and performing many other tasks.

A successful Cook will be quick, diligent, and willing to improve on the job while functioning in a fast-paced, busy environment as a part of a team. You will be deft and able to consistently follow instructions as well as all health and safety rules in the kitchen. You will be tasked with doing your part to help our restaurant operate as efficiently and effectively as possible, but also provide us creative input on how we can improve our product and service to our guests. We’re always open to listening to feedback and insight into how we can make improvements.

Principal Duties & Responsibilities

  • Follow the prep list created by management for food and craft cocktail service
  • Measure ingredients and seasonings to be used in cooking
  • Prepare cooking ingredients by washing and chopping vegetables, cutting meat etc.
  • Prepare bar craft cocktail ingredients including fresh juices, syrups, and garnishes
  • Prepare dishes such as poke bowls, poke stacks, ceviches, sausages, appetizers, and salads
  • Undertake basic cooking duties
  • Maintain a clean and orderly kitchen by washing dishware, sanitizing surfaces, taking out trash etc.
  • Ensure all food and other items are stored properly
  • Label and stock all ingredients on shelves so they are organized and easily accessible
  • Always comply with nutrition and sanitation guidelines
  • Perform other kitchen duties as assigned
  • Provide Manager and owners with timely feedback to support the continuous optimization of kitchen operations

Knowledge, Skills & Abilities

  • Possess manual dexterity to be able to safely operate cutting tools and kitchen utensils
  • Knife skills (especially working with fish/seafood plus)
  • Committed to preparing and providing fresh, tasty, and quality food to our guests
  • Ability to consistently and creatively present and plate the food we serve
  • Knowledgeable about food safety standards and restaurant cleanliness
  • A team player with good communication skills
  • Must be reliable and responsible
  • Patient with an ability to stay positive under pressure
  • Very good physical condition and endurance
  • Physical ability to stand for an entire shift and lift 50+ pounds
  • Ability to accurately understand and complete all documentation and instructions
  • Ability to process or have experience with POS computer systems
  • Availability to work varied hours/days, including days, nights, weekends, and holidays
  • Positive attitude and ability to engage and work with a diverse set of people

Opportunity to make $20 - $24+ per hour. Compensation depends on experience. ($18 - $20 per hr Plus percentage of tips)

Kilowatt has additional tasting rooms located in Ocean Beach and Oceanside, as well as a space-themed speakeasy, The Space Pad located inside our Oceanside location and Forbidden Cove a Tiki bar speakeasy inside our Kearny Mesa location. All three tasting rooms typically have 20+ beers on tap and are open 7 days per week. The brewery currently operates a 7 BBL brewhouse with 15 BBL fermenters, which have won several awards including 2018 Great American Beer Festival Chocolate Beer category bronze medal winner, 2019 Great American Beer Festival Belgian Dubbel Beer category bronze medal winner, 2021 Great American Beer Festival Specialty Beer category gold metal winner, 2022 World Beer Cup Silver winner, medal winner at San Diego International the past 4 years and voted as a WestCoaster Best of SD Beer in 2018.
