The Grand Bellevue Rail Dining Experience offers guests a one-of-a-kind, unique, step back in time. Unmatched sunset views of the Narragansett Bay from our historic yet remodeled train cars while we travel by rail through Aquidneck Island.
The Grand Bell Dinner Train features 4 dining courses prepared onboard our 900 sq ft kitchen car and three excursions to choose from: Spruce Dining Car, Murder Mystery Theater Car, and our newest addition of the Amber Room Bar Car.

The Chef de Cuisine will be responsible for all culinary components onboard our kitchen car while ensuring the highest food quality and safety standards.
This CDC works in tandem with our Food & Beverage Director and ownership to deliver a joint culinary vision to our guests. CDC develops and implements new menu items along with improving on existing offerings.
This is a hands-on cooking role among a small team and is not limited to expo.
Responsibilities include but not limited to:
-Creating weekly prep lists, inventory tracking before/after service periods.
-Handling of weekly food ordering and delivery acceptance ensuring promptness and freshness of all inventory.
-Training, managing, mentoring, and scheduling of a small culinary staff. Hands on cooking will be required on most shifts.
-Oversight of all cleanliness standards, knowledgement and enforcement of all safe food handling procedures at all times.
-Pre-planning and execution of seasonal menus in keeping with cost estimations and budgeting.
Ideal candidate will have a minimum of 2+ years fine dining background. A culinary degree or other advanced culinary arts certification is preferred. Banquet background is preferred as we are not typically ala carte but pre-prepped/pre-booked. Must have or be willing to establish working relationships with local vendors. Must be comfortable speaking with media/press when opportunities arise. Ability to work at all times in harmony with our diverse team is paramount.

$58,000-70,000 based on experience.
