The cook provides quality preparation and service of food and beverage items as required on the menu and production sheets. Is effective in carrying out daily responsibilities of the department in the absence of the Director of Dietary Services or Manager.

A. Education and Training - Some high school or vocational training in the food service industry is preferred. Must annually attend in-service programs as mandated by the N.Y. State Health Code.
B. Experience - One year of related experience required.
C. Character - The individual must possess good moral character, patience, and compassion for the elderly.

Essential Job Functions
A. Read, write, speak, reason, hear and remember.
B. Stoop, reach, stand, walk, push, pull and lift heavy weights (over 50 lbs.).
C. To do large quantity cooking within specified time frame. To wash pots and pans, equipment and utensils using various cleaning compounds.
D. Perform all job duties and responsibilities as outlined below in IV.

Duties and Responsibilities
The Cook is supervised by the Director of Dietary Services, Dietary Manager or Nutrition Manager. The job duties and responsibilities are to be performed while observing the following standards: job standard (knowledge, ability, skills), technical skill, quality, quantity, judgement/problem solving, decision making, and initiative. The responsibilities include, but are not limited to the following:
A. Cook large quantities of food with staggered cooking, heating, baking, etc.
B. Prepare food and beverages according to standardized recipes, production sheets and menus.
C. Organize duties so that foods are prepared for service at appropriate times and within acceptable temperature ranges.
D. Follow therapeutic menu sheets and meal forms.
E. Set up and serve on tray line.
F. Set up portable steam table and serve in dining room.
G. Operate all electric, gas and steam equipment properly.
H. Maintain equipment in proper sanitary and operating condition.
I. Adhere to work/time schedules.
J. Receive/verify and put stock away.
K. Follow proper cleaning procedures as per schedules.
L. Maintain sanitary conditions during all food preparation and delivery by following correct infection control procedures and by thoroughly cleaning work areas and equipment in the department including walls and floors.
M. Oversee meal preparation in absence of Director and Manager.
N. Request, store, label, rotate, and dispose of all food and supply items, perishable and non-perishable.
O. Prepare and serve meals that are palatable and appetizing in appearance.
P. Answer phone and deliver any specific meal request to units.
Q. Serve food in accordance with established portion control procedures.
R. Perform other related duties as required by their manager.

General Duties and Responsibilities
A. Participate in all department meetings, mandated in-services, and assigned committees.
B. Maintain a positive and professional relationship with residents, registrants, family members, legal representatives and visitors.
C. Maintain a positive and professional relationship with all personnel, including supervisors, co-workers and volunteers.
D. Follow all safety regulations and precautions at all times; use protective devices as required.
E. Wear and maintain proper uniform/clothing as established in the uniform dress code policy, including name tag identification. Maintain acceptable personal hygiene.
F. Maintain confidentiality and resident/patient/registrant rights.
G. Maintain confidentiality of all issues and subject matters, including records, reports, data and other related sensitive materials.
H. Maintain an acceptable attendance rate.
I. Follow all laws, rules and regulations of the Federal and NYS Health Codes in regard to the department and overall organization operations.

Working Environment
The worker is subject to inside environmental conditions and is protected from weather conditions. Also subject to heat (above 90 degrees) and humidity, especially in the summer months, and is exposed to hot water, stoves, ovens, automated equipment, sharp equipment/utensils, steamers and chemicals. The department operates from 6:00 a.m. to 7:30 p.m. daily.

Exposure to Blood and Airborne Pathogens
This position has been categorized into Occupational Safety and Health Administration Category III: no contact with blood or body fluids.
