Brian Arden Winery is seeking a skilled lead line cook or Sous Chef who can execute all aspects of our food program. This position would work closely with the Executive Chef with all aspects of kitchen duties. Assisting with the club parties, private events and other special experiences would also be expected. This position is highly visible to the public- the kitchen is open, and every patron who walks through the door interacts with the chefs. Candidates must understand that you are “on-stage” at all times.
Duties will consist of:
- Executing five course menus for groups of up to 10 guests
- Preparing meals and food to meet the specifications of guests in a timely manner
- Properly measuring kitchen ingredients and food portions
- Ensuring kitchen staff adhere to set standards, procedures, department rules and sanitation requirements
- Using kitchen knives and equipment such as grills, ovens, steamers and warmers in food preparation
- Managing the kitchen inventory and ensuring supplies are fresh and of high quality
- Ensuring proper food temperatures when cooking and proper storage afterward
- Keeping the workstation and kitchen equipment clean, organized and sanitized
- Taking charge of kitchen opening, closing and other side duties as directed by the Executive Chef
- Preparing food to order off of the “Small Bites” menu and assembling Cheese and Charcuterie Board for Private Tastings
- Serving/running food
- Dishwashing, glass washing/polishing and other similar tasks
- Maintaining a clean and organized kitchen area, including coolers, freezers, and work station
Qualifications:
· 2+ years experience in a restaurant or winery kitchen
· Demonstrate a professional demeanor in all circumstances
· Exceptional customer service and sales skills
· General knowledge of wine and food pairing
· Ability to work with minimal supervision
· Must be at least 21 years of age
· Ability to lift and carry 50 lbs
· Ability to stand on one’s feet for extended periods of time
· Self-starter with the ability to multi-task and work in a fast-paced environment
· Able to work weekends and holidays
Five days per week. Hourly compensation plus bonus.

- Prepare all food items as directed in a sanitary and timely manner
- Follow recipes and presentation specifications
- Operate standard kitchen equipment safety and efficiently
- Clean and maintain station in practicing good safety and sanitation
- Assist with the cleaning and organization of kitchen and equipment
- Restock items as needed throughout the shift
- Adhere to all sanitation and food production codes
