GENERAL SUMMARY: The Registered Dietitian is responsible for overseeing Health Center food service program and providing the level of supervision necessary to ensure that courteous and efficient service is delivered as well as high quality and nutritious foods.
Essential Job Duties:
1. Assists in the planning, scheduling and supervising of Health Center dietary personnel.
2. Assists in developing all menus for Health Center residents assessing preferences and nutritional needs. Assists in assuring staff education is provided to dietary personnel in accordance with the staff education plan plus provides on the job training for Health Center dietary personnel.
3. Assists in developing work assignments for all dietary personnel assigning specific jobs and spot-checking work to ensure standards are met.
4. Assures that each resident’s nutritional adequacy is met by utilizing the assurance of Nutritional Adequacy Policy.
5. Maintains pertinent and appropriate records, reports, schedules and studies as required by local, state and federal regulations and otherwise requested.
6. Initiates and supervises the completion of hands-on intakes as assigned.
7. Maintains individual diet information by transcribing information from the dietitian’s weekly notes to the Kardex, menu and nourishment list when indicated.
8. Attends Care Plan Meeting.
9. Interviews new admissions and documents food preferences on the approved form.
10. Contacts the dietitian between scheduled visits if unplanned or special therapeutic diets are ordered.
11. Assures that meal tallies are accurate on a daily basis.
Other Duties:
1. Assists in providing on-the-job training for Health Center dining room personnel.
2. Participates in cost control measures.
3. Attends in-service training and education sessions as assigned.
4. Performs specific work duties and responsibilities as assigned by supervisor.

QUALIFICATIONS
1. High School diploma/GED required. Must be a registered dietitian or hold a C.D.M. certification in healthcare.
2. A minimum of two years supervisory experience in food service operations of a health care setting. Minimum of one year experience in a long-term health care environment.
3. Certified in safety and sanitation in regard to food service.
4. Experience with performing clinical assessments on residents, meeting with Care Plan Team, performing input on MDS.
5. Ability to communicate with, understand, empathize with, work with and be tolerant of residents, families, visitors, peers, supervisors, and subordinates.
6. Ability to interpret and explain special dietary orders and menus, and refer or answer questions, and serve as a resource for meal service process.

PHYSICAL REQUIREMENTS/WORKING CONDITIONS
Light to moderate physical effort 90% of the time. Must be able to stand and walk up to 70% of the time. Must be able to stoop, bend, and stretch frequently; must be able to lift up to 30 pounds infrequently; must be able to see, hear and speak.
