POSITION PURPOSE:

To oversee all restaurant operations in the absence of the manager or supervisor, to ensure service to the guest meet their expectations and Hilton Standards.

ESSENTIAL FUNCTIONS:

Retrieve bank from safety deposit box; count bank and register before and

after shift. Pre-shift meeting informing staffs what will occur in the restaurant

(reservations, VIP parties and specials).

Walk dining room; checking water glasses, inspect the reset of each table,

ensure Hilton’s standards of cleanliness and condition, throughout the

shift.

Check that buffet is setup correctly, all food items have utensils, all chilled

items are iced, wood floor is clean at all times, food labels are placed in front

of correct food items, monitor buffet and relish bar throughout shift.

Open restaurant at scheduled time, greeting guests as they approach the

host stand. With appropriate menus, guide the guest to requested section.

Inform guest / guests of the specials offered for that day then inform the server

of the number of guests that were seated in their section.

Answer phones for either room service order or inquiries on the restaurant

whether it is reservations or pricing.

Monitor tables for beverage refills and to inquire about the meal. As guests

depart restaurant, thank them and invite them back.

Closing restaurant – have all transactions and reports ready to complete for

servers and dining room attendants. Also, all side duties are to be checked.

Other

Regular attendance in conformance with the standards, which may be established by Hilton from time to time, is essential to the successful performance of this position. Employees with irregular attendance will be subject to disciplinary action, up to and including termination of employment.

Due to the cyclical nature of the hospitality industry, employees may be required to work varying schedules to reflect the business needs of the hotel.

Upon employment, all employees are required to fully comply with Hilton rules and regulations for the safe and efficient operation of hotel facilities. Employees who violate Hotel rules and regulations will be subject to disciplinary action, up to and including termination of employment.

SUPPORTIVE FUNCTIONS

In addition to performance of the essential functions, this position may be required to perform a combination of the following supportive functions, with the percentage of time performing each function to be solely determined by the supervisor based upon the particular requirements of the hotel.

  • Assist servers, dining room attendants, and room service when and where help is needed.
  • Perform other duties as requested within the realm of the positions job knowledge and by Restaurant Manager.
  • Prepare all daily sheets on the restaurants (voids, counts on each shift, balancing and drops).
