Purpose:

Primary responsibility is to maintain the organization, cleanliness and sanitation of work areas and equipment. Duties include but are not limited to clean dishes, food preparation equipment and utensils.

Essential Job Functions:

• Maintain complete knowledge of all services related to the Company.
• Maintain confidentiality of any and all proprietary information as required by the Company.
• Wash dishes, glassware, flatware, pots, or pans, using dishwashers or by hand.
• Maintain kitchen work areas, equipment, or utensils in clean and orderly condition, as directed by culinary management.
• Place clean dishes, utensils, or cooking equipment in storage areas.
• Maintain the cleanliness and organization of the loading dock/refuse areas of the culinary department as directed.
• Sort and remove trash, placing it in designated pick up areas.
• Sweep or scrub floors.
• Clean garbage cans with water or steam.
• Assist in the maintenance of chemical inventory and linen supplies, notifying the kitchen supervisor of needs in a proactive manner to avoid outages or overstock of these supplies.
• Assist in the receiving and stocking of any and all supplies as directed.
• Monitor breakage and damage to any items or equipment within the culinary department.
• Transfer supplies or equipment between storage and work areas, by hand or using dollies.
• Assist in any culinary tasks as directed, producing in adherence to established recipes and techniques.
• Meet with supervisor to review assignments, anticipate business levels, changes and other information pertinent to the job performance.
• Prepare and organize all items needed from different areas to ensure all items are in place and ready for service.
• Review status of work and follow up actions required with kitchen supervisor prior to leaving.
• Assist any other department with cleanliness, sanitation, and organizational tasks as directed by the kitchen supervisor.
• Other duties as assigned by supervisor.
