Executive Pastry Chef

You will play a pivotal role in creating and executing a Pastry program in two different concepts. The food you prepare, cook and serve makes our guests smile and wanting more. Plan, organize, control and direct the work of colleagues responsible for preparation of sweet items, pastries, cakes, ice creams, sorbets, fruit compotes, breads, and chocolates while ensuring superior quality and consistency.

What you will be doing:

Creative license to develop a Pastry program for two separate concepts, that is traditional and inspired, drawing inspiration from seasonal ingredients and local purveyors.

Participate in international research and development trips. Exploring new cultures and gaining invaluable perspective of what truly makes the cuisine desirable.

The role is based in San Diego and includes frequent travel to all restaurants to ensure pastry consistency across all locations.

Coordinate the selection, training, development, and evaluation of colleagues and managers on the pastry team through effective management and leadership to ensure that established cultural and core standards are met; long-range strategic planning for restaurants.

Assist in the planning and development of menus; ensure the correct preparation and presentation of a consistent level for all food items prepared through production and demonstration.

Control labor and operating expenses through effective scheduling, budgeting, purchasing decisions, and inventory control.

Set up control systems which will assure quality and portion consistency and the ability to create proper purchasing specifications as well as monitor and review operating criteria and develop an awareness of the importance of food preparation and quality.

Work harmoniously and professionally with co-workers and supervisors.

Your experience and skills include:

Ability to work well under pressure in a fast-paced environment.

Ability to work cohesively and collectively as part of a team.

Previous experience in multiple culinary/food and beverage department head positions specializing in pastry design and creation a plus.

Requires the ability to operate and utilize culinary production equipment and tools.

Requires reading, writing, and oral proficiency in the English language.

Physical Demands:

Exposure to extreme temperatures.

Prolonged periods of standing and/or walking

Able to carry up to 50lbs.

Job Type: Full-time

Pay: $80,000.00 - $90,000.00 per year
