The Job//
The Sous Chef supervises the daily production and distribution of all food items and ensures consistency and compliance
amongst the kitchen team. This role assists in overseeing the overall running of the kitchen and team. They work to
assist in building a team and culture through effective training and lead by doing mentorship. They work under the
Executive Chef and assist in overseeing the overall running of the pastry kitchen, cleanliness and organization and labor
cost management. They participate in creating menu items using a variety cooking techniques and ingredients.

Your Responsibilities//
- Embodies the standards of the Gurney’s Brand by displaying professionalism in all forms of communication.
- Ensure effective leadership and communication throughout the property.
- Manage and develop direct reports towards individual growth and quality standards of excellence.
- Prepare all required paperwork, including forms, reports and schedules in an organized and timely manner.
- Ensure that staffing attendance is matching the operations needs and that any changes in scheduling have been

- Ensure that all equipment and the overall environment are kept clean and in excellent working condition
- Participate in all inventories on a daily, weekly and monthly basis in accordance to restaurant policies and
rotation and that profitability remains within targets

- Where applicable, work with FOH RETAIL team: Daily quality check of food items, assist with daily set-up, keep
- Management of organization of kitchen, including organization and cleanliness of dried storage, walk-ins, and
- Assist in developing and implementing the menus for the restaurant/bakery including daily and seasonal
- Be prepared to expedite service efficiently and effectively maintaining the proper pace and food quality. Work
- Preform purchasing responsibilities on a daily basis. Verify all deliveries for proper quantities and quality. Take

- Understand and implement all policies, procedures, standards, specifications, guidelines and training programs.
- Supervise the kitchen team, assuring that direction and guidance is provided and quality standards are achieved.

- High School Diploma, or equivalent level of education, required (Must be able to add, subtract, multiply, and
